Artichokes
At home we love artichokes, in all their versions and this recipe that I leave you today especially. I learned them some time ago in another school and since then they stayed in my kitchen.
This is the recipe:
Small artichokes
1 l. of water
1 head of garlic (for the garlic chips)
1 l. of mild olive oil
50gr. parsley
100gr. sunflower oil ( for the parsley oil )
100 gr. kikos (for the kikos salt)
50 gr. Dijon mustard ( for the mustard vinaigrette )
Preparation
For the artichokes:
Clean and turn the artichokes. Once turned, cook them for 15 minutes in cold water and let them rest in the same water.
Set aside.
Make a parsley oil by placing the sunflower oil and the parsley in the Thermomix. When the mixture rises to 55ºC, let it stand in cold water and filter it after 24 hours with a strainer.
Fillet the garlic and make garlic chips, from cold oil to control the color.
Crush in the Thermomix the toasted corn or kikos, until obtaining a powder similar to salt.
Make a vinaigrette with olive oil and Dijon mustard.
Place the artichokes cut in halves in the center of the plate. A little salt of kikos on them, the vinaigrette, parsley oil and some slices of toasted garlic.
Let me know if you like them because I love them😉.

Alcachofas

Maloles, I love how you have combined different textures and flavors in this dish. The artichokes look tender and the garlic chips and kikos salt I’m sure must add a delicious crunch. And the vinegar and parsley oil give it that nice, fresh touch. Thanks for sharing.😊
