Welington of hake, prawns and leek.
Freshly baked, I couldn’t wait to plate it because it was so beautiful, before cutting all the portions.
I have confit the hake at 80*, I have cooked some prawns and the leek also very finely chopped with a little bit of oil.
With butter and flour and milk I have made a very light béchamel sauce, to this I have added the shrimps cut in two, the leek, and the fish confit crumbled in flakes, with all this I have been bound to be able to work once cold.
I have put it in a mold with plastic wrap and when it was cold, I have stretched the puff pastry and I have wrapped it, I have put the lattice as decorative and baked until it looks like in the photos.
Also with philadelphia cheese and the rest of crushed leeks I made a very soft cream to accompany this delicious puff pastry

Welington de merluza, gambas y puerro.
Recién horneado, no he podido esperar de lo bonito que me habÃa quedado a emplatarlo, antes de ir cortando todas las porciones.
He confitado la merluza a 80*, he cocido unas gambas y el puerro también a parte muy muy picado con un poquito de aceite lo he pasado.
Con mantequilla y harina y leche he hecho una bechamel muy ligera , a esto le he añadido las gambas cortadas en dos, el puerro, y el pescado confitado desmenuzado en lascas, con todo ello a quedado ligado para poder trabajar una vez frio.
Lo he puesto en un molde con papel film y cuando estaba frÃo, he estirado el hojaldre y lo he envuelto, he puesto el enrejillado a modo decorativo y al horno hasta que queda como en las fotos.
También con queso filadelfia y el resto de puerros triturados hice una crema muy suave para acompañar este delicioso hojaldre

Muchas gracias Sussan la verdad que quedo bastante resulton, el wellington aunque no es de carne , triunfó más si cabe al ser de pescado
