Galet stuffed with carabinero with its roe, seafood cream base.

The carabinero is sautéed with oil and garlic.

Then I have chopped it to be able to stuff it.

With the heads, leek, carrot, a spoonful of fried tomato and brandy flambé I made a good fumet.

I have taken out the vegetables and I have crushed them into a very light cream.

Taking advantage of the roe to give a touch of crunch.

I fried the spinach to decorate it so that it would be crystallized

It is impressive how you have combined techniques such as sautéing, using a homemade fumet and flambéing with brandy to bring out the seafood flavors. Also, the detail of the crystallized spinach adds a crunchy touch that I love. The seafood cream looks very light and velvety and perfectly complement the carabinero stuffing.

          Thanks for sharing. 🫶🏻
