I leave you the recipe for the Sardines marinated in avocado toast that I published some time ago and that I promised you to put that same day.You have to forgive me, but my memory plays tricks on me sometimes😅 I apologize for my bad head.

I just posted it on my Instagram https://www.instagram.com/p/DDafWIAoMZj/?img_index=1 andlooking at my post here I realized I didn’t put it up. I edited the original post but it’s been a long time since that and in case you can’t find it I’m passing it on to you today 😉.

      For the marinated sardines*:

*The quantities are for reference. I do it by eye depending on the amount of sardines I make at any given time.

      • 6-8 sardine loins (without scales or bones and previously frozen)
      • 1 lime
      • 1 lemon
      • 1 tangerine
      • 1 tablespoon pink pepper
      • 1 tablespoon black peppercorns
      • Fresh rosemary
      • Salt

For the toasts:* 4 toasts of toasted bread

      • 4 toasts of toasted bread
      • One avocado
      • Half a small tomato
      • Half a lime
      • A few drops of Tabasco (optional)
      • 1/4 red onion
      • 2 radishes (optional)
      • Salt
      • A little lime and tangerine zest

*For 4 avocado and sardine toasts

1️⃣Pon the sardine loins clean of bones and scales for half an hour in a bowl with ice water to bleed and blanch. After this time, remove from the water and dry well with kitchen paper. Place in a well-protected tray and freeze for at least 24 hours before marinating.

2️⃣ Pour a pinch of salt in the bottom of the container where you are going to marinate the sardines. Add half of the peppercorns (pink and black) and place the sardines skin side up. Squeeze the citrus fruits, pour the juice over the sardines and also the rest of the pepper and some rosemary.

3️⃣Tapa the container (use plastic wrap if there is no lid) and put it in the refrigerator. Leave in the marinade for 18 to 24 hours, depending on how cooked you like them (for me they were perfect in 18 hours).

Let’s go with the avocado toast.

4️⃣Prepara the avocado with a little lime juice, a pinch of salt and if you like it spicy, a few drops of Tabasco (to taste), mash with a fork, add salt and set aside.

5️⃣Quita the seeds to the tomato and chop; cut the radishes and onion into thin slices.

      Assembly:

Spread the avocado on the toasts. Then, a bit of chopped tomato, place a sardine, some red onion and some radish slices if available, and finish by grating some citrus peel over them.

      Enjoy!
