      Quince jelly.

At this time of the year, dulce de membrillo is already a tradition at home. I like to make it in different shapes. The ones in the little house have walnuts (I made them as a gift). With Thermomix it is easy and only three ingredients although sometimes I add walnuts.

      This is the recipe

      – 500 g of quince (with skin and without seeds)

      – 1 peeled lemon (without pips or the white part)

      – 380 g of sugar (some people put 500 g but it is too sweet)

With walnuts, put 10% of the quantity of quince.

Pour all the ingredients into the blender and blend 30 seconds, on speed 5-7. Lower the remains towards the blades with the help of the spatula and program 20 minutes at 100Âş C, speed 5. At the end remove the cup from the nozzle so that it evaporates and caramelizes, putting it another 10 minutes, at 100ÂşC, speed 5.

If you add walnuts, now is the time, mix well with the spatula and pack.

Transfer the mixture to a container or mold and let it cool in a cool place, then put it in the refrigerator or freezer.

It will keep for a long time and is delicious with soft cheese.
