Bica of Castro Caldelas
The Bica is a typical Galician dessert, a very spongy sponge cake. This is how it came out of the oven. It was a gift and I have no current photo of the cut. The second picture is a few years old, I usually cut it into pieces, although the surface is broken by the sugar but I don’t mind. Delicious to accompany a good coffee. We eat a piece, two, three …If you make it be careful, because it creates addiction😂.
Ingredients:
4 eggs
200gr butter
300gr sugar
200gr of liquid cream
400gr flour
1 sachet of yeast
Preparation:
1.- Preheat the oven to 160ºC with heat up and down.
2.- Put the butterfly in the mixing bowl and add the eggs, sugar and butter at room temperature. Program 3 minutes, speed 3.
3.- Add the cream and mix for 2 minutes, speed 3.
4.- Remove the butterfly, add the flour, yeast and mix 10 seconds speed 6. Finish wrapping with the spatula gently.
5.- Prepare a rectangular baking pan with greased parchment paper. Pour the Bica and give it a few strokes so that the dough occupies the entire mold. Sprinkle the surface with plenty of sugar and bake for 50 minutes at 160ºC.
6.- Let stand 10 minutes in the mold (inside the oven with the door ajar) and then let it cool outside.
I learned the recipe years ago in a Thermomix blog, although I adapted it to my taste.
