The tree tomato, also known as tamarillo or Andean tomato is the fruit of a medium-sized shrub native to and cultivated in Peru, Bolivia, Argentina, Colombia and Ecuador and its appearance is very similar to tomatoes known in other geographies.
Like the potato, it belongs to the Solanaceae family, which includes more than 2,000 species of American plants. The tree tomato is available in three varieties, which are differentiated by the color of their skin: red, orange or yellow. The red and orange varieties are sweeter and have more tender seeds.
The skin is extremely bitter and, if you want to eat them raw, the gestures that accompany them will certainly be worthy of a cartoon session!
In a pot I put the tomatoes, a generous portion of white wine, 3/4 cup of brown sugar and half a teaspoon of ground cloves and reduced them for 45 minutes. The tomato skins will burst and will be very easy to peel off. It is important to leave the stems to dress up the dish.
At home I always have ice cream and sorbets for my grandchildren and on this occasion, I had Oreo cookies filled with vanilla ice cream. I removed one of the cookies and the other part was the base of the dish; on it I put three tomatoes, added juice from the reduction and to balance the flavors, I integrated a few drops of extra virgin olive oil and salt flakes. Even though I am diabetic, I committed the sin and ate a portion; nothing I can’t tell the parish priest on Sunday to absolve me.
¡Buen Provecho!
