During the persecution of the Jews in Spain and Portugal, there was a great migration to the United Kingdom, among other countries, and the creation of this dish is attributed to the mothers who, in order to avoid cooking on the Sabbath, prepared and served it on that day. In the original recipe cod should be used, however, this can be substituted with any white fish,

The dish is the main exponent of fast food in England, Australia and New Zealand, however, it has started to gain followers in different parts of the world.

As a curious fact, I once took my daughter on vacation to the UK and then we took a cruise in the Baltic. Daily she ate either Fish & Chips or Gravlax, so much so that whenever we got off the boat, she was surrounded by cats meowing because of so much fish…!!!!

For this iteration, I used hake and the batter I used to coat it has high protein wheat flour, rice flour, baking powder, salt, vodka and ale. The idea of the vodka is that, when frying the piece, it evaporates but leaves small spaces between the batter and creates a spectacular crunchiness, which is what you expect from this part of the dish.

For the accompaniment I made potato pave, sweet potato pave and a combination of potato and sweet potato; all were fried in the deep fryer. The peas were prepared with butter.

The tartar has mayo, dijon mustard, Eureka lemon drops, bitter pickles and capers.
