Known in Mexico as chambarete, in Spain as Morcillo, in Argentina as Garrón and in many other geographies as osso buco, this piece of beef comes from the hind leg of cattle, specifically from the upper part of the tibia bone.

With its deep flavor and tender texture, chambarete de res is the perfect choice for preparing comforting stews, hearty soups and dishes full of flavor. It is tender in texture, intense in flavor and very versatile.

It is commonly prepared in Mexico as a stew with carrots, cabbage, potatoes and cooked corn.

In this iteration, I did not make puchero; rather, using green tomatoes, onion, garlic, spices and seasonings I prepared a sauce that I stewed with purslane and, after cooking the chambarete in a pressure cooker with water, salt, pepper, garlic and onion, I integrated them to form the dish that I now present to you and that I had the pleasure of eating. In the same image at the top right, are the tortillas with which I accompanied it.

      enjoy your meal!
