      This is my early contribution to the #ZeroWasteChallenge: a pear pie with goat cheese, arugula, honey, and walnuts.

      This is a French-inspired recipe I learned last year and regularly prepare for dinner. This time it was special because I used only leftovers: two lonely pears left over from the weekend, a bit of arugula we didn’t eat the day before, and—most importantly—the goat cheese.🐐🧀

      The story began in August when I decided to try making clabber milk. We usually make it with cow’s milk, but you know me, guys—I love a challenge, so I wanted to try using goat’s milk. I filled small jars and left them on the terrace for a couple of days to ferment, but I didn’t like the taste, so I decided to store them in the fridge at our country house.🫙 The following week, the clabber milk separated into cheese and whey, which is a protein-rich liquid expelled from curds during the cheesemaking process. 🙂

      I was a bit skeptical, but I opened the jars and discovered that, unintentionally, we had made very soft and tasty goat cheese, which paired beautifully with my pears, arugula, and walnuts. 🙂

      Nothing went to waste… we didn’t throw anything away… and even the goat cheese was saved. 🙂

Reusing homemade goat cheese is a fantastic idea and shows a great commitment to sustainability. Plus, the combination of pear, goat cheese, arugula, honey, and walnuts sounds both delicious and unique.
