Today I present a culinary creation that fuses technique, flavor and elegance: Low temperature chicken with apricot sauce and vegetables sautéed in brandy.Ingredients and Preparation:

For the chicken:Fresh chicken breasts, marinated with a mixture of fresh herbs, minced garlic and a touch of lemon.

Cook the chicken at low temperature (sous-vide) at 65°C for 1.5 hours to ensure a juicy and uniform texture. This method allows the flavors to infuse deeply into the meat, resulting in an unparalleled sensory experience.

      For the apricot sauce:

Fresh, ripe apricots, peeled and pitted.White wine and sherry vinegar reduction, mixed with brown sugar to balance acidity and sweetness.

Cook the apricots in the reduction until they fall apart, then strain the mixture through a fine sieve to make a silky smooth sauce.

Add a pinch of fresh thyme for an herbal touch to complement the fruit.

For the vegetables sautéed in brandy:

A selection of fresh seasonal vegetables such as baby carrots, asparagus and colorful peppers, cut into thin strips.

Sauté the vegetables in a hot pan with extra virgin olive oil until slightly caramelized but still crisp.

Deglaze the pan with a good splash of brandy, allowing the alcohol to evaporate and leaving a deep, aromatic flavor.

      Plate Assembly:

On a main plate, I place the chicken breast cut into medallions, showing off its inner juiciness. On the side, a generous spoonful of the apricot sauce, its bright golden color adding a visual contrast to the dish. Accompanying, the sautéed vegetables, carefully arranged to highlight their vibrant colors.

To finish, a dash of Maldon salt and a pinch of freshly ground black pepper over the chicken, a drizzle of extra virgin olive oil to brighten, and some fresh thyme leaves to garnish.

      Pairing:

I recommend pairing this dish with a fruity white wine, such as a Riesling or Chardonnay, whose fruity and acidic notes balance the sweetness of the apricot sauce and complement the richness of the chicken and vegetables.

I hope you enjoy this dining experience as much as I enjoyed preparing it. Bon appétit.
