Any advice on how to fry properly on a regular pan?

You should first heat the pan (alone, with nothing on it) You wait till you see a some smoke coming out of it. You add the oil and wait till it gains some temperature. Throw a sample of what you want to fry and watch if it makes bubbles. THEN you add what you want to fry.

I didn´t know that, Mary. Never ever put the pan on the stove with nothing on it. Thank you!
