    Hi @caramelsandcreams

    Ganaches can have a long shelf life but it all depends on the care we take when storing them or the temperature we use to maintain them.

    Normally a ganache with some fruit pulp can last between 2 and 3 weeks in the refrigerator. Which does not mean that after that time it cannot be consumed, it is simply that it is no longer as fresh and may lose some qualities.
