    Hi everyone, I can’t find the fresh brewer’s yeast used in the pizza recipes and I’m wondering about using active dry yeast and what conversion you all would recommend. Thank you.

    Hi Ryan!

    Yes, you can use active dry yeast as a substitute for fresh brewer’s yeast (also known as fresh compressed yeast). The standard conversion is:

    👉 1 part active dry yeast equals 3 parts fresh yeast.For example, if the recipe calls for 15 g of fresh yeast, you would use 5 g of active dry yeast.
    Just keep in mind that active dry yeast needs to be hydrated in warm (not hot) water for a few minutes before adding it to the dough.

    You don’t need to adjust the other ingredients, but since different types of yeast can slightly affect the flavor and fermentation, I recommend doing a small test batch first to see if you’re happy with the result.

    Perfect, Thanks! I’ll be making the dough today and cooking it tomorrow. We finally got the Ooni oven at my house hooked up, I’m so excited 😁
