Really impressed by the passion showed by Chef Ignacio Barrios in the Classic Sauces course. He treats bechamel sauce with great respect. I followed his technique to make a cheese sauce for my toddler’s mac and cheese. Now she asks for it every day.

Have you thought about trying a stronger cheese to mix things up a bit? Something like gruyère or aged cheddar works wonders.
