That’s not just a cookie—it’s a statement piece! 🍪✨ No wonder your family and friends love it. How did you balance the crunch of the nuts with the texture of the chocolate? That combo can be tricky but oh-so powerful when done right.
Share that gem on social and tag us @scoolinary_es and chef @antonio.bachour—we need that Afternoon Tea… Seguir leyendo

And in the interest of celebrating our mess-ups too, these are the ones I filled with a salted rum caramel and toasted pecans. Same batch of dough but unfortunately they loosened in the oven and the filling seeped out, probably due to the sticky nature of the caramel. I guess the universe didn’t want me to make too adult a…

Even if they spread in the oven, the combination of rum, salted caramel, and toasted pecans sounds amazing, definitely a flavor worth repeating!
If you want them to hold their shape better, you could try chilling the dough well before baking or thickening the caramel a bit so it doesn’t leak out as easily.
Will you be giving this recipe another… Seguir leyendo- View 2 replies

Just had to try these pinwheel cookies (from Anna Gordon’s American Cookies course) though I only had bread flour so needed to tweak the recipe a little. What a great idea and I filled them with homemade nutella – delicious. #CookeChallenge

Dear Paula: these look truly delicious—salted rum caramel and toasted pecans? That’s grown-up cookie energy and we are HERE for it! 🥃🍪 The universe may have tried to sabotage your filling, but flavor clearly won the battle.
That said… just a heads-up: the #CookieChallenge closed yesterday, March 30th at 23:59 CET 😢

Using bread flour definitely changed the texture a bit, maybe they turned out a little firmer or had a different bite. And with homemade Nutella… double bonus!
If you want to tweak the texture to be closer to the original, you could try reducing the gluten slightly with a bit of cornstarch or letting the dough rest longer to relax. Did you… Seguir leyendo- View 1 reply

Seguir leyendo1- View 2 replies

This cake was a gift for a friend. I came up with the flavor combination myself, inspired by her favorite tastes.
The base is a génoise sponge, with vanilla pastry cream, caramel, and white chocolate mousse. 🫠- View 1 reply

I wouldn’t say I’m an expert in pastry making. I consider myself a beginner. Nevertheless, thank you—I take that as a great compliment and a boost of encouragement!
For now, pastry making is just a hobby, but I certainly hope it will become my primary profession one day. 🥰❤️🫠- View 1 reply

Nickson: could you try again now? IT Team thinks it was a connection problem you had.
We tested it from multiple user accounts, including theirs, and everything seems to be working fine. It was most likely a temporary connection issue. Please also tell us if it happened with any other lesson.
