An Italian chef who reimagines homemade recipes with modern techniques and authentic flavors
Born in 1979, Matteo Monti trained alongside some of the most renowned chefs in the Italian and European culinary scene, including Scabin and Lopriore. Since 2023, he has run his own restaurant, Razdora, in Milan—a place where he channels his technique, knowledge, and experience into the great classics of Italian cuisine.
Razdora, named after the Emilian term for traditional pasta makers, is an intimate space with just fifteen seats. Every guest receives personal attention from Chef Monti himself, who oversees the entire experience—from taking orders to serving the coffee (brewed, of course, in a moka pot). The menu changes with the seasons, and each day features a special dish, such as Pisarei e Fasò—a Piacenza specialty—or gnocchi, which are faithfully served every Thursday.
