Carpaccio de Salmon Ahumado
Algo sencillo, sin apenas preparación pero con mucho sabor.
Salmón ahumado, cebolla encurtida. pimienta rosa, cebollino fresco, sal negra, unas gotas de zumo de limón y un buen aove temprano de mi tierra que quita el sentío.
Y a vosotros, os gusta el salmón?

Such simple elements, yet every one of them knows exactly how to sing. The pickled onion and pink pepper alone already have me leaning in, and that early olive oil from your land sounds like pure magic. I love salmon when it’s treated with this kind of respect and lightness—it lets the flavor shine without shouting. Beautiful work.
