      This is one of the most difficult dishes i prepared so far. It took me a lot of work to find a decent balance, but finally im done.

      Risotto di Sibari, Oyster + Clams cream, lime, burnt bread dust and figs sorbet

        Se ve delicioso, Fabrizio. ¿Qué ha sido lo más complicado del plato? ¿Alguna elaboración en concreto o encontrar el balance de sabor? Sea como sea, enhorabuena!!

        • @beatriztorijagmail-com gracias! Balancing all the flavours was pain in the ***. Burnt, acidic, irony, the flavour of cereal… The final touch was the lime, that’s the real balancing king in this ensemble
