      ¡Hola Comunidad! 👩‍🍳Probando recetas Scoolinary 👨‍🍳 Hice los garbanzos con espinaca y crutones de masa madre de la Chef Irini Tzortzoglou y me sorprendió el equilibrio de sabores.

      El apio aporta un frescor que cambia todo, y el puré de espinacas tiene una textura y color increíbles. Una combinación simple, pero con técnica y mucho sabor. ¿Qué les parece? La segunda foto es la original. Tal vez debería haber puesto más espinaca, ¿verdad? Usé lo que tenía en la nevera. 👉 Ver receta completa

        Lo bueno de que cuando intentas hacer una receta ya inventada y no te sale exactamente igual es que le has aportado a esa receta un poquito de ti, y eso es bueno.

        Looks delicious! 😍 I love how fresh and cozy it looks at the same time. The balance seems perfect to me. And don’t worry about the spinach, it gives it a nice light tone. I wanted to check the recipe too, but I couldn’t find it in English. Is it only available in Spanish?

          Description: A comforting dish of chickpeas cooked with celery, onion, and carrots, thickened with cornstarch and lemon juice, combined with a smooth spinach purée and crispy sourdough croutons seasoned with oregano and black pepper.

          Author: Irini Tzortzoglou

          Ingredients:

          Chickpeas

          280 g cooked chickpeas

          3 celery stalks, finely chopped

          1 small onion, chopped

          2 carrots, peeled and chopped

          2 tbsp extra virgin olive oil

          2 tsp vegan vegetable broth powder

          1 bay leaf

          A pinch of crushed celery seeds

          A pinch of chili flakes

          1 heaping tbsp cornstarch

          Juice of 1/2 lemon

          Spinach Purée

          100 g spinach

          50 ml water

          1/2 tsp vegan vegetable broth powder

          Croutons

          1 slice of sourdough bread, crust removed

          2 tbsp extra virgin olive oil

          A pinch of dried oregano

          A pinch of flaky salt

          Ground black pepper to taste

          Preparation:

          Cut the bread into small cubes. Mix with olive oil, oregano, salt, and pepper. Bake at 200°C (390°F) for 12 minutes until golden. Let cool and set aside.

          Cook the spinach with water and vegetable broth powder for 3-4 minutes. Cool quickly and blend until smooth. Adjust salt and set aside.

          In a pot, heat olive oil and sauté onion, celery, and carrot. Add chickpeas, bay leaf, celery seeds, and chili flakes. Add 200 ml water and vegetable broth powder. Cook for 15 minutes, adding more water if needed.

          Mix cornstarch with lemon juice and a spoonful of hot cooking liquid. Whisk and pour into the pot. Stir until thickened. Adjust acidity and seasoning.

          Warm the spinach purée and mix with the chickpeas when serving. Garnish with croutons and extra chili flakes if desired.

      • El apio me fascina, el olor me apasiona, cuando cocino con apio no puedo dejar de olerlo, miraré esa receta para hacerla porque tiene una pintaza🤤
