Really impressed by the passion showed by Chef Ignacio Barrios in the Classic Sauces course. He treats bechamel sauce with great respect. I followed his technique to make a cheese sauce for my toddler’s mac and cheese. Now she asks for it every day.

That béchamel looks spot on creamy, smooth, not a single lump in sight. And the fact that your daughter’s asking for it every day? That’s the ultimate sign of success! 🙌
Have you thought about trying a stronger cheese to mix things up a bit? Something like gruyère or aged cheddar works wonders.
