    Hello,
Welcome to the Scoolinary community, and thank you for your question!

In the Vegan Pastry Essentials course, Chapter 3: Fillings and Toppings, you’ll find three recipes that might be helpful.

I’ll also share a basic vegan buttercream recipe with you.

    Vegan Buttercream

    Ingredients:

200 g vegan butter (at room temperature)

    400 g powdered sugar (sifted)

2-4 tablespoons plant-based milk (oat, almond, or soy)

    1 teaspoon vanilla extract (optional)

1 pinch of salt (optional, to enhance flavor)

    Instructions:

    1. Whip the butter: Using a hand or stand mixer, beat the vegan butter for 2-3 minutes until smooth and creamy.

    2. Add the powdered sugar: Gradually incorporate the powdered sugar in 2-3 additions, beating at low speed at first to prevent it from spreading.

    3. Add the liquids: Slowly mix in the plant-based milk until you reach the desired consistency. For a firmer buttercream, use less milk.

    4. Incorporate the vanilla and salt: Beat for another 2-3 minutes until the buttercream is light and fluffy.

    Tips:

For a chocolate version, add 30 g of cocoa powder and adjust the plant-based milk if needed.

For a more stable texture in warm climates, use a 50/50 mix of margarine and vegetable shortening.

Can be refrigerated for up to one week—rewhip before using.

I hope this information is useful!Best regards.
