Pineapple tuille

In general, yes you can dehydrate the pineapple in a dehydrator at 50 °C as an alternative to using the oven, as long as the goal is to slowly remove the moisture to achieve a crispy texture. Just make sure to check the dryness level periodically, since the drying time can vary depending on the thickness of the pineapple slices and the dehydrator model.
As for shaping it, some tuiles can be molded if gently reheated, but this largely depends on the specific preparation and sugar content. Some recipes allow for that flexibility when reheated, while others may not.
