    Thank you for your question. I see you’re enrolled in the Donuts and Donuts & Cronuts courses, so I’m assuming your question refers to the classic donut recipe. If that’s not the case, please let us know which recipe you’re referring to so we can give you a more accurate answer.

    As for your question: if you don’t have a warming drawer, you can still create similar conditions for proofing the dough using some home-friendly alternatives.

    Here are a few ideas to help maintain the dough at around 32°C (90°F):

    ▪️Oven with the light on: Place the dough inside your oven with the oven turned off and the interior light on. That small heat source usually creates a warm environment of about 30–35°C (86–95°F).

    ▪️Microwave with a cup of hot water: Heat a cup of water in the microwave for a couple of minutes, then place it alongside the dough inside the turned-off microwave. The steam and heat will create a warm, humid environment.

    ▪️On top of the fridge or near a gentle heat source: Some areas of your kitchen are naturally warmer,those can work well as makeshift proofing spots.

    ▪️Large container or box with hot water: Place the tray of dough inside a closed box or large container next to a bowl of hot water. This helps create a warm and slightly humid environment (just make sure it’s not too hot so it doesn’t harm the yeast).

    Always remember to cover the dough with plastic wrap to prevent it from drying out.
