      Today I made a couscous tuna salad. I needed something comforting, something light, simple, and nourishing… the opposite of the day. Because Monday, like every other Monday, arrived with that familiar crash: inbox full, heavy head, everyone wants something, everything is urgent, and you’re just human.

      So I added:
      – couscous, to remind me that simple is enough
      – chickpeas, for stability
      – carrots, peas, peppers, cherry tomatoes – to remind me that color still exists
      – red onion, to cut through it all
      – tuna, for strength
      – olive oil and a pinch of salt, because nothing works without them

      I tossed it all in one bowl and ate it slowly. It didn’t change the world, but it did make the day better.

      Sometimes it’s enough to eat something that doesn’t add to the chaos in your body. And that’s a perfectly valid Monday survival strategy. 😊 #BeatTheMondayBlues

          That salad sounds comforting and meaningful,like a small act of self-care we all need from time to time.
          I have to say, my Monday’s been pretty calm so far. I’m recovering from a nasty cold and tonsillitis, so this week is starting off a bit kinder than the last, and I’m really grateful for that.

I do actually enjoy plating and decorating the dish when I have the time, but today was one of those wild Mondays where just getting something nourishing on the plate felt like an achievement in itself 😅 As for the ingredient that called to me most… I’d say the chickpeas. There was something about their earthiness and heartiness that just felt necessary today, like my body wanted something solid to hold onto. Your soy milanesa with Porsalut and corn sounds incredible!             Cuscús, garbanzos, atún, zanahoria, tomates cherry, cebolla… esa ensalada quizá no cambie el mundo, es posible… pero ha mejorado tu día y me ha alegrado el mío, a 3.000 km de distancia. Sencilla y contundente, sabrosa y reconfortante. Me encanta esa hora de la comida sagrada en la que, aunque sea momentándamente, todo pasa a un segundo plano 😍
