@Sol Damiani, thank you 🙏. this is my 1st time making this recipe, although I’ve been practicing making the regular croissant, cross lamination is new to me. Following the step by step process for cross lamination , freezing ,cutting ,I think 🤔 thats the key to achieved a good result.
