    Hi Huma.

The container the chef uses to proof the dough is a Gastronorm tray, size GN 1/2, with a depth of approximately 150 mm.

    ▪️ Approximate dimensions: 32.5 cm x 26.5 cm x 15 cm high.

This is a standard size commonly used in professional bakeries perfect for proofing large batches of dough like these doughnuts.

If you don’t have this exact model, you can use a similar-sized container. What’s important is that the dough can be spread out in an even layer and has enough space to rise properly.

Good luck with your doughnuts they’re going to turn out amazing! I hope this info helps, and if you have any other questions, I’m here and happy to assist.

    Best regards.

    Sussan.
