Hi Huma.
The container the chef uses to proof the dough is a Gastronorm tray, size GN 1/2, with a depth of approximately 150 mm.
▪️ Approximate dimensions: 32.5 cm x 26.5 cm x 15 cm high.
This is a standard size commonly used in professional bakeries perfect for proofing large batches of dough like these doughnuts.
If you don’t have this exact model, you can use a similar-sized container. What’s important is that the dough can be spread out in an even layer and has enough space to rise properly.
