Here are some approximate measurements used for the entremets featured in the course:
Orange Dessert:
Use semi-sphere molds approximately 2.5 to 3 cm in diameter
A larger semi-sphere mold of about 5 to 6 cm in diameter.
Equatorial:
4.5 cm semi-sphere mold for the English vanilla insert.
7.5 to 8 cm semi-sphere mold for the Manjari mousse.
Black Forest:
The vanilla namelaka uses a mold approximately 6 cm in diameter.
Cheesecake:
Uses the same semi-sphere molds and the red mold used for the Black Forest, Shortcake, and Equatorial desserts.
You can also check the websites for Silikomart or Pavoni most chefs use these brands to make their entremets.
