Hello, my question is what kind of strawberry cream does Chef Antonio put on the flower before the compote, and how is it made? Thank you.

As you mentioned, the chef uses the same cream from the Bow tie Croissant recipe, which is the Strawberry-Inspired Valrhona Cream. You can find it in Chapter 6, Lesson 36.
