    Is the pear puree necessary in this? Can it just be left out or do I need to adjust the remaining ingredients? I would prefer to make a straight caramel, without fruit puree in it.

    Hi @betsy-schoettlin

    The amount of puree in this recipe is considerable. If you want to do without the puree, you would have to do a test and adjust the quantities.

    That’s what I thought. Will there be any non-fruit or chocolate caramel recipes added to the lessons? I’m looking for a soft caramel that holds its form without being too stiff.
