    Hi D Home Baker

For Neapolitan pizza, if fresh yeast is not available, you can use dry yeast. The equivalent is approximately one-third of the amount of fresh yeast indicated in the recipe.

    ▪️For example:

If the recipe calls for 3 g of fresh yeast, use 1 g of dry yeast.

    ▪️Tip:

Dissolve the dry yeast in a bit of warm water (taken from the total amount of water in the recipe) to activate it before mixing it with the flour. This will ensure better fermentation.

I hope this information is helpful.

    Best regards.
