I reviewed the questionnaire, and everything seems to be in order.
The first question is about preserving the color of pistachio, and the correct answer would be option 3: “Slowly and gradually.”
You can verify this information in Lesson 56, at minute 1:28 of the video, where this point is mentioned.The second question is about pectin and which ingredient, when added, creates a gelling network. The correct answer is “lemon juice.”
