    Could you please explain what is glucose ingredient and if it’s easy to find in super markets or only in specialized stores.

    Glucose is a very commonly used ingredient in professional pastry and baking. It usually comes in the form of glucose syrup (also called liquid glucose) and has several important uses:

    It prevents sugar from crystallizing in candies or syrups.

    Improves the texture of creams, ice creams, and ganaches.

    Adds elasticity and shine to doughs and glazes.

    Also helps extend the shelf life of certain products.

    Where can you find it?

    I see from your profile that you’re located in Mexico, so here are some options where you can easily find it:

    Physical or specialty stores

    Look for it at candy supply shops or professional baking supply stores such as:

    La Casa del Repostero

    Materias Primas Monterrey

    Pastelandia

    La Ideal (Mexico City)

    You can usually ask for glucosa líquida or jarabe de glucosa, and it comes in sizes from 250 g up to 5 kg.
