    Hello,

    What is the height of the cake tins and the weight of the batter for each tin? The book mentions 18 cm for the diameter but does not specify the height. Also, is baking with fan on or off? I wish the course would provide all the details. These are common details that make a difference.

    Total batter weight and mold size
    In the video, you can see that the chef weighs the mixture, and the scale shows around 780 g, which matches the approximate total weight of the ingredients listed in the course recipe (cream cheese, butter, egg yolks, milk, flour, egg whites, sugar, etc.), adding up to about 790 g.
    This confirms that the chef is preparing a double batch in the video, which is why you can see that she fills two molds.

    The recipe is designed for a single mold measuring 18 cm in diameter, as indicated in the course material. Based on the volume of the batter and how it sits in the mold (as shown in the video), we estimate the height of the mold to be around 8 to 10 cm, which allows the cake to rise properly without overflowing.

    Fan on or off?
    For this type of gentle baking using a water bath and low temperature it’s recommended to bake with the fan turned off. This prevents the surface from cracking or browning too much, ensuring a more even and delicate bake that helps achieve the signature airy and silky texture of the Cotton Cheesecake.
