Monday Rebellion – Aurora Crostini

Monday mornings are when most people rush headlong into their duties, but I like to pause. Just long enough to remind myself that even the start of the week deserves to be celebrated.

Mondays have a silence of their own. Not the lazy stillness of Sunday, but a rhythm that hints at new beginnings, structure, the chance to arrange life all over again. And yet, I prefer to disrupt that rhythm, to give it a festive note, as if opening the day by rolling out a red carpet.

Today, I did it with Aurora Crostini. Rustic slices of dark bread, toasted in olive oil until they held the warmth of earth and sun. On them, a spread of homemade Pesto Verde, fragrant with basil and pine nuts, green like the promise of spring. Then came the mozzarella, soft and milky, a reminder that tenderness is also nourishment. Peppery arugula followed, slightly bitter, reminding me that even mornings must carry a taste of what is not sweet. Prosciutto brought depth and gravity, a counterpoint to all that softness. And finally, a poached egg… fragile yet full, its golden yolk spilling luxuriously with the first touch of a fork.

These breakfasts are my small rebellion against routine. Monday may stand for work and obligation, but I choose to mark it with a gourmet gesture. It’s my way of remembering that even the most ordinary Monday can look festive, if only we allow it. Breakfast becomes a small celebration and the whole day starts to feel a little lighter.
