The Mala Market’s recipe for Cantonese Steak Chow Fun is SPECTACULAR! Real ingredients from China do it every time. I’ve been making this on a regular basis since 2023. It includes douchi – a specific type of fermented black soybeans that are umami bombs. This also includes wide rice noodles from Guangdong.

That sounds incredible, Kevin! Douchi is such a game-changer—those deep, fermented notes just wrap everything in umami. I love that you’re using real ingredients from China; it makes all the difference. Wide rice noodles from Guangdong? Yes please. I can already imagine the chew and the wok hei. Might have to give this one a go and play with the plating a bit too!

This screams *flavor all over*! 🔥 The glossy noodles, that perfect char, and the pop of green from the scallions — everything looks so intentional and crave-worthy. How do you like to balance the heat from the douchi? And do you ever switch up the protein, or steak is the one?

@soldamiani The douchi adds umami. There’s no heat in this one as it is Cantonese, even though The Mala Market specializes in Sichuan. I always do beef for this one.
