The Soul of Béchamel
There are sauces that behave like people. Some are impatient, boiling over with haste. Others are stubborn, resisting our attempts to tame them. And then there is béchamel… quiet, almost shy, but with a depth that reveals itself only to those who wait.
Before, I treated it as a formality: flour, butter, milk. A white curtain drawn over the layers of lasagna. But after following Chef Ignacio Barrios’ course, I discovered that every sauce has its own soul, its rhythm, and its patience. I began to understand that even the most modest sauce holds a secret.
Cooking béchamel became less about technique and more about listening. The gentle whisper of butter merging with flour, the slow, steady breath of milk folding into the roux. It taught me that nothing in the kitchen, not even the simplest act, is without meaning.
Now, when I prepare lasagna, I no longer rush. I let the béchamel speak in its own language of patience and transformation. And in that silence between whisk and simmer, I realize this sauce is not only part of the dish, it is the memory that holds everything together.
