      To say that this was one of the tastiest meals I have ever had is an understatment.

      I’m working my way through the Mexican Cuisine course and tonights meal is my version of chilaquiles.

      Yesterday I made the cooked green sauce and marinated some chicken breasts in my own mexican inspired spice mix.

      Tonight, the chicken was gently fried and let sit to rest while I made a pico de gallo.

      I placed some white corn chips into a serving bowl and splashed the green sauce over the chips. Scatterings of the sliced cook chicken were next followed by a small handful of grated cheese and the pico de gallo. I then add topped the dish with a perfectly fried egg and added a spoonful of guacomle, which was also made using a recipe from the course.

      When all these flavours came together, it was magic.

          • @kevin-godbee. I am loving the Mexican cuisine course, the recipes are fantastic. Some of the ingredients are a bit hard to find here in Australia but thats the beauty of cooking, you get to substitute ingredients with what you have on hand, who knows it could be the next best thing.

            Wow, this really does sound like magic on a plate! 🌟 All those layers… crisp chips, juicy chicken, fresh pico, creamy guac, and that egg on top, no wonder you’re calling it one of the tastiest meals ever.
