Which ingredient or flavor surprised you the most in this recipe?

I discovered this year that the south of Albania has a huge number of vegetarian dishes – really, a veggie-lover’s paradise! I noticed that they always use long peppers, which makes stuffing more difficult, but also makes the dish stand out among other Balkan stuffed pepper dishes.
