Zucchini Season is ON! 🥒💚 #GreenChallenge
If you have a garden, you probably know the two extremes:
– no harvest at all, or
– everything ripening at the same time.Right now, our garden is overflowing with zucchini and cucumber.
It’s always a challenge to come up with new dishes, but yesterday we nailed a great one:
We sliced fresh zucchini, sprinkled with salt and cheese, baked them for a few minutes… and voilà – crispy zucchini rings! 🥳
For the dip, I gave classic mayonnaise a twist:
I roasted the zucchini cores (left from cutting the rings), then blended them into the mayo with a splash of white wine and lemon juice.
