Hamachi Tiradito – delicate slices of yellowtail with orange supremes in Ajo Verde sauce with wasabi mayo. Inspired by Japonesa, a Japanese-Peruvian fusion restaurant in Manila, Philippines. I was quite pleased with how this came out. The orange supremes are hard to see, but they are in between each piece of fish.

Kevin, the plating is impeccable, with clean cuts and a very appealing color contrast. The vibrant green really enhances the fish.
Have you tried adding some texture to the sauce to create more visual depth? I’m also wondering if you’ve considered submitting this dish to the Green Challenge, where the idea is to transform ingredients, combine techniques, and incorporate the color green into your creation, telling the story or description of your dish.

Wow… this is a showstopper! The colors, the balance, the clean lines… it’s the kind of dish that makes you stop and admire before diving in. I can only imagine how that bright orange and fresh hamachi play together. Absolutely gorgeous work!
