Karahi Chicken – Indian Restaurant Style. This is a Northern Indian classic adapted to restaurant style cooking. It’s another one that you don’t normally see on Indian restaurant menus. We’ve had all of the usual suspects over and over and over – Butter Chicken, Chicken Tikka Masala, Lamb Vindaloo, etc. There’s nothing wrong with these dishes, but I want to find new things that somehow get left out or forgotten about. There’s a recipe book, “1,000 Indian Recipes”, so there’s no reason to make the same 30 over and over.

That Dal Makhani looks absolutely amazing — the creamy texture and swirl of cream on top give it such a thoughtful touch. And that Chicken Karahi… what beautiful color! The glossy sauce, the way everything is cut, the peppers on top… it all just says “flavor” and makes you want to dig in.
