      Scoolinary episode:

      Dog Cake & Kotlovina – Celebrating a Dachshund’s Birthday! 🎂🐾

At Scoolinary Academy, I’ve learned many things, but I never expected my biggest challenge would be preparing a cake for a dog. My dachshund Coco recently celebrated his first birthday, so as the “child” of a serious Scoolinary student, he deserved a treat worthy of a little gourmand.

Especially for him, I created a festive dog-friendly cake: a base of cooked rice, tender boiled chicken, and sweet carrots, decorated with a layer of boiled spinach bound by natural rice starch serving as gelatin. To perfect the plating and demonstrate my academy-learned skills, I topped it with grated fresh carrot. Coco and his two dachshund friends were delighted, at least judging by how quickly the cake disappeared, which surely means I passed the test!

For the adult guests, however, I prepared something entirely different – Kotlovina, a traditional Croatian dish rarely found on Serbian menus, making it a real gastronomic adventure for my friends. Kotlovina is part of my Croatian heritage, a dish I’ve carefully perfected over many years and proudly preserved as a culinary secret.

The concept behind Kotlovina is straightforward: in a large, shallow metal pan (known as a “kotlić” or “kotlovina plate”), various meats are quickly seared in pork lard. In this case, I chose smoked bacon, homemade sausages, juicy pork neck, and deboned chicken thighs. Once the meat is briefly and vigorously seared just enough to seal in juices, it’s moved to the edges of the pan. Then vegetables like onions, carrots, red bell peppers, and tomatoes are sautéed in the center, generously deglazed with homemade broth and white wine, until a thick, aromatic sauce forms. The meat is then returned to simmer gently until perfectly tender, maintaining a crispy exterior and succulent interior. Optionally, beans, mushrooms, or parboiled potatoes can be added toward the end, but this time I kept it simple with basic vegetables.

Alongside the Kotlovina, we served golden crispy potato wedges and a refreshing cabbage and cucumber salad… a perfect balance to the rich flavors. We also grilled fresh corn on the cob, just to add that irresistible summer touch to our celebration. And we enjoyed an authentic Olivier salad brought by a friend from Russia. Interestingly, this salad is also very popular and frequently served at celebrations in Serbia, yet curiously in Croatia, it’s mysteriously called “French salad,” with the only notable difference being the absence of meat.

For dessert, I returned to my newly beloved discipline of ice cream making, so the guests enjoyed two homemade flavors: Chocolate and Malaga, because true Scoolinary students know no proper celebration ends without something sweet.

In short, it seems I passed my culinary exams celebrating Coco’s birthday, while he passed his own maturity test (well, that second part might still be debatable).

🐾✨ Bon Appétit on all fours! ✨🐾

Okay… deep breath… THIS. IS. EVERYTHING. 😭 From the gourmet-worthy dog cake (that presentation! that carrot border!) to the visual poetry of the Kotlovina ritual, this post is pure storytelling joy. Every frame feels like a love letter to food, family and furry companions.
The composition in your cooking shots is spectacular, especially the layering of textures and colors — I mean, those red peppers popping like fireworks over the rustic base? Stunning. And your Scoolinary apron moment? Iconic 🔥 You brought technique, heritage and celebration together so naturally. Even Coco’s expression screams “my hooman trained at Scoolinary”.
What’s the most unexpected lesson you’ve learned while cooking for someone who can’t technically say thank you? We can SO tell he had a blast!
And hey… please, please share this magic on your IG stories y tag us @scoolinary_en

@undefined You know that feeling when you read something and suddenly your face breaks into a smile… not the polite kind, but the kind that comes from your belly? That’s exactly how your comment made me feel. Thank you, truly. Not just for the compliments (though I won’t pretend they didn’t make me happy 😄), but because you saw what I was really trying to share… That food can be so much more than a recipe. It can be a gift, a language, a joke, a memory, and a form of love.

Cooking for Coco wasn’t about making something perfect. It was about honoring this weird, beautiful bond we have with creatures who can’t say “thank you” but somehow manage to say everything else. The most unexpected lesson? That joy… real, chest-expanding joy and doesn’t need applause. Sometimes it just needs a clean bowl, a wagging tail, and the feeling that you did something good for someone who trusts you with their whole being.

Thank you for reading the moment between the lines.

Coco would totally lick your face if he could. 🐾🐶

Oh wow, this is just too beautiful!
Lana, I swear my heart filled up reading your post so much love, so much care, so much sweetness! Coco has the most wonderful parents, and you can tell every little detail was made with so much thought and affection (that heart-shaped cake totally melted me!). The kotlovina looks amazing, but today, my standing ovation goes to that special moment you created for your furry little one.
Thank you for making us part of the celebration, for wearing your Scoolinary apron and putting so much heart into it.
My own pup is turning 17 this Friday, so now I’m thinking about what to prepare for his special day.
What part did you enjoy the most while creating this double feast?
Big warm hug and lots of gentle tail wags and kisses for Coco and the whole gang! 🐾

@undefined Oh Susan, your message genuinely warmed me to the core! ❤
Seventeen?! What an incredible milestone! Please give your pup the biggest hug from us (Coco insists on sending a wet nose boop too 😁). That’s a life full of tail wags, naps in sun patches, and unconditional love… he absolutely deserves a proper feast!

The part I enjoyed most? Honestly… seeing Coco’s confused-but-happy face as everyone sang to him. He had no idea what was going on, but he knew he was important and that’s all that mattered. Also, making the dog cake felt both completely ridiculous and weirdly sacred at the same time, if that makes sense? 🙃

I can’t wait to see what you prepare… please share photos if you do! Sending a big warm hug and a whole parade of tail wags from our little gang to yours! 🐾💕

@undefined Coco is incredibly lucky to have such a loving and sensitive family… and honestly, I feel lucky too to be able to share these little big moments with you. I laughed and melted picturing that little face like “I have no idea what’s going on, but I love it” while everyone sang what a pure and perfect image! And yes, the cake totally makes sense… there’s something so special about cooking with so much love for those who can’t tell us with words, but say everything with their eyes and their hearts.

Thank you for that wet kiss (Peluchín got it right on the nose and received it with lots of love)!
Sending you a big, warm hug filled with gratitude… and a whole parade of tail wags from our corner to yours! ❤️
