First time making a frozen dessert. WOW! Vanilla ice cream and caramel cookie sandwich. It was easy to make the ice cream since there was no churning needed. I had to use white chocolate because my daughter has allergies to milk chocolate and dark chocolate. My biggest problem was doing the coating with the white chocolate. I just couldn’t get it thin enough. I tried adding shortening but it didn’t seem to help. Even with the problem with the chocolate, they did taste great. Cookies came out nice, a bit crisp, but just right with the ice cream in the middle. The easy part was making the caramel. I kept the flame low and just kept stirring.
I am an amateur and learning everyday. This was just what my family needed, we are in the middle of a heatwave and the ice cream really hit the spot.

We completely understand the challenge of working with white chocolate it can be a bit tricky! But we love that you found a safe alternative for your daughter. Thoughtful details like that really show how special this dessert was for you and your family.
One little trick you can try is adding a splash of neutral vegetable oil (like coconut or sunflower) to thin out the mixture and achieve a finer coating without losing shine. For a cleaner finish at the bottom edge, you can briefly rest the dipped pieces on parchment paper and then transfer them quickly to a rack.
Have you thought about experimenting with molds or “reverse dipping” techniques to get a more even coating?
And yes… nothing beats homemade ice cream during a heatwave! 🧊☀️
