Jorge Vallejo, Mexican chef, has charted an exceptional culinary career since his humble beginnings as a dishwasher at age 16. In 2012, he fulfilled his dream by opening Quintonil, a restaurant in Mexico City that quickly established itself as the ninth best in the world.

Quintonil, located in the Polanco neighborhood, is the realization of Vallejo's vision to offer authentic Mexican cuisine. The chef's philosophy is based on the freshness and authenticity of local ingredients, many of which are cultivated in the restaurant's rooftop garden.
