To join the #FishChallenge, I decided to present a proposal that unites the technique of my sister country, Peru, with the richness of the product of my homeland, Ecuador.
Following the techniques learned in the Introduction to Peruvian Cuisine course by chef Ignacio Barrios, I prepared this version of ceviche using sole as the protagonist, a spectacular fish that I got directly from the beach of Crucita (Portoviejo, ManabÃ) thanks to the artisanal fishermen of the area.
🔪 The dish and its technique:

The Fish: Sole very fresh. I took full advantage of the bones to make a concentrated sauce and intensify the flavor of the leche de tigre.

The Spiciness: Instead of the Peruvian aji limo or yellow chili, I used our authentic aji mouse manabita (that small and round one). It brings a spectacular aroma and spiciness that gives the true identity of the Ecuadorian coast to the dish.

Los MaÃces: For the game of textures, I included a double tribute to corn. On the one hand, the inevitable corn of tender and generous grain, and on the other hand, I replaced the classic Peruvian canchita for our traditional toasted corn, an icon that is consumed with passion in the Ecuadorian Andes region.

The Accompaniment: I completed the dish with sweet potato. Curiously, Manabà is a great producer and exporter of sweet potato, although locally it is not consumed in excess; I wanted to vindicate its value in this recipe.
I had the opportunity to try ceviche in Peru and fell in love with it, so I wanted to replicate that experience by proudly adapting it to the ingredients I have at my disposal. I hope you like it as much as I do preparing it!

Para sumarme al #FishChallenge, decidà presentar una propuesta que une la técnica del paÃs hermano, Perú, con la riqueza del producto de mi tierra, Ecuador.
Siguiendo las técnicas aprendidas en el curso de Introducción a la Cocina Peruana del chef Ignacio Barrios, elaboré esta versión de ceviche utilizando como protagonista el lenguado, un pescado espectacular que conseguà directamente en la playa de Crucita (Portoviejo, ManabÃ) gracias a los pescadores artesanales de la zona.
🔪 El plato y su técnica:

El Pescado: Lenguado fresquÃsimo. Aproveché las espinas al máximo para realizar un fondo concentrado e intensificar el sabor de la leche de tigre.

El Picante: En lugar del ajà limo o amarillo peruano, utilicé nuestro auténtico ajà ratón manabita (ese pequeño y redondo). Aporta un aroma y un picor espectacular que le da la verdadera identidad de la costa ecuatoriana al plato.

Los MaÃces: Para el juego de texturas, incluà un doble homenaje al maÃz. Por un lado, el infaltable choclo de grano tierno y generoso, y por el otro, reemplacé la clásica canchita peruana por nuestro tradicional tostado, un icono que se consume con pasión en la región de los Andes ecuatorianos.

El Acompañamiento: Completé el plato con camote. Curiosamente, Manabà es un gran productor y exportador de camote, aunque localmente no se consuma en exceso; quise reivindicar su valor en esta receta.
Tuve la oportunidad de probar el ceviche en Perú y me enamoró, asà que quise replicar esa experiencia adaptándola con orgullo a los ingredientes que tengo a mi disposición. ¡Espero que les guste tanto como a mà prepararlo!
