Other creations from my “elements of chocolate chip tea party”. These are sweet sandwiches that try to mimic – apart from the brown skin – the usual sandwiches of an English high tea party, egg and smoked salmon sandwiches. The egg is created from panna cotta and orange cremeux, frozen and quickly sliced to give the egg slice shapes. The filling contains some lemon curd as well to give some more fresh, fruity flavour. The smoked salmon is made of thin layers of strawbelly jelly. (Chocolate chip cookie crumbles are in the buttercream to mimic the usual herbed butter in terms of outlook within the sandwich.) 🥪
