Is it possible to contact the chef or the app admin if something is missing in a course. In the French pastry vegan gluten course, it is missing the quantities of the 4 flours in the mix. Without the quantities, it is impossible to make the mix and therefore the recipe. Thank you

In the lesson Creating a custom gluten-free flour blend, he says he created the best gluten-free flour mix for making choux and baba made with buckwheat, soy flour, potato starch and rice flour and that the exact amounts were under the video but they are not.
That gluten free mix is needed to make the following recipes:
chapter 5 – Flan Pâtissier250 g gluten-free flour blend
Chapter 6 – Apple TartPâte Sucrée250 g gluten-free flour blend
Chapter 7 – Baba au rhum250 g gluten-free flour mix
Second question: Victor says his gluten free mix is the best for making choux but for his choux, he is not using the mentioned gluten free mix but another mix of flour as below so my question, can we use the blend with buckwheat to make choux and why he is not using it.
I have subscribed to this App specifically for vegan gluten-free course ad this one is the only one so thank you in advance for responding to my question and adding the missing information.
