So we have a weird, wacky and unique New Year tradition.
Waterballoon fight and jacuzzi relaxation
Paired with a flapjack buffet and outdoor movie night. We live in South Africa, and we currently have summer here.
I made our flapjack buffet a bit more special this year.
Melted chocolate ‘taco’ flapjack
Vanilla flapjack with sour cream, brie and fig.
Red flapjack with strawberries, blueberries and cream.
It is absolutely delicious. Never thought to upscale flapjacks before, but I was inspired.

My motivation — I like a plate of food that is full of small surprises. People usually compliment dishes where I combine brie with sour cream or camembert with creme fraiche.
What I loved most about this flapjack spread is that every bite held a small surprise, but as a whole it all still matched beautifully. Some bites had cream and cheese, others only fig. There were no two bites that tasted exactly the same. The white side was also more light and refreshing with less sweetness, while the red side had more sweet flavourbursts.
The chocolate flapjack in the middle was a straight chocolate explosion – sweet and decadent that melted in the mouth.
