Just doing my dutiful housewife things today (haha!) and whipped up a batch of fresh ANZAC biscuits for my husband. There’s something so comforting about that golden chew, the smell of oats, coconut and golden syrup drifting through the house, and the simple pleasure of baking something that’s been loved for generations.
ANZAC biscuits are more than just a sweet treat — they’re an Australian icon. Their origins trace back to World War I, when families and women’s groups baked long-lasting biscuits made from oats, flour, coconut, butter and golden syrup to send to soldiers overseas. They were sturdy enough to survive the long journey and became a heartfelt symbol of home, resilience, and remembrance.
So here I am a century later, still keeping tradition alive — and my husband well fed!

Glad I made a double batch, as everyone has been into the bickie jar several times. Sadly for me they contain gluten so none for me, I just get to enjoy the smell throughout my house.
